A.R. Moist Chocolate cake with Chocolate Buttercream Icing

Ingredients
2 cups sugar 1 3/4/ cups lightly spooned all purpose flour 3/4/ cup cocoa, sifted 1 1/2 tsp baking soda 1 1/2 tsp baking powder 1 tsp salt 2 eggs 1 cup milk 1/2 cup coconut oil 2 tsp vanilla 1 cup boiling water Chocolate Buttercream Icing1 1/3 cups powdered sugar 1/4 cup cocoa 3 T. butter softened 2 T. milk 1/2 tsp vanilla
Directions
Preheat oven to 350'. Grease 9x13" baking pan. In a large bowl, combine sugar, flour, cocoa, baking powder, soda, and salt. Add eggs, milk, oil and vanilla; beat by hand with a wisk for about 60 to 80 strokes, and stir in boiling water. Batter will be very thin. Pout into prepared pan and bake 35 to 40 minutes or until done. Cool and Frost. Yield 15 servings.

Chocolate Buttercream Icing
In a bowl, sift together the sugar and cocoa. Mix well. Cream in the butter then stir in milk and vanilla and beat to consistancy.

    I loved it. I actually omitted the water, the result was a very rich and very sweet brownie-like cake. There is one mistake: in the ingredients listed it says 1 1/2 tsp. baking powder twice. I assumed that the second reference meant baking soda (which is mentioned in the directions). - 1/10/09

    I have no idea what the metric substitution for cups would be so I would just advise you to go online and order a set of measuring cups if you want to make recipes that call for such. Sorry I can't be of better help.
