Hearty Filet Mignon

Ingredients
1 Zucchini, Sliced Lengthwise1 Portobello Mushroom Cap, Sliced3/4 cup Artichoke Heart Halves2 Green Onions, Cut into 1" Pieces2 tsp Olive Oil1/2 Tbsp Balsamic Vinegar2 Filet Mignons (4 oz each)
Directions
In a large ziplock bag combine the vegetables with the oil and vinegar. Shake the bag well and set it aside. Salt and pepper that filets and place them on a medium-hot grill pan. After about 3 minutes, flip them to cook for 3 more minutes. Then flip them again and slide them to the side of the pan. Add the vegetables and cook for 3 to 5 minutes, stirring frequently.
