Stuffed Roasted Duck

Ingredients
1 whole duck with skin ingredients to marinade duck :2tsp salt2tsp ground black pepper2tsp paprika1tbsp garlic&ginger paste (blended/pounded)1tbsp honeylemon juice from 1/2 lemoningredients for stuffing2tbsp corn oil1 medium onion, coarsely chopped2 clove garlic, coarsely chopped1 medium potato11/2cup frozen green peas2 stalks medium celery, choppedhalf medium carrot,diced coarsely1 chicken cube/stock granules3 green chillies / 0.5cup bell peppers strips1 small tomato,cut into wedges
Directions

DIRECTIONS


1. Preheat oven to 375 degrees F (190 degrees C).
2. Rub salt, pepper, and paprika,lemon juice,honey into the skin of the duck. Place in a roasting pan.let si for 15 mins while preparing the stuffing.
3. Heat wok, n heat corn oil.
4. Saute garlic & onion till fragrant.add in chicken stock and green pepper,
5. Add carrots,stir for 1 minute, then add all vegetables.
6. add a little water if too dry. season with salt and pepper.
7.Dish out and stuff it into duck cavity and secure by sewing or with toothpick
8.grease baking tray with cooking spay
9.Place stuffed duck into tray and bake in oven uncovered for 1 hour
10. Pour some melted butter all over the bird, and bake for additional 30minutes or till the juice runs clear when poked with a fork
