Coconut Oatmeal Cookies

2 c quick-cooking oatmeal2/3 c. flaked coconut, plus reserve to sprinkle1 c. butter or margarine1 c. sugar2 eggs3 T. milk1 1/2 tsp. vanilla1 1/2 c. flour1/2 tsp. salt1/2 tsp. baking soda
Preheat oven to 400. Pour oatmeal and coconut onto a cookie sheet, and toast in oven for about 8 minutes. Meanwhile, cream butter and sugar. Add eggs, milk, and vanilla, beating well. Sift together dry ingredients. Add to creamed mixture, blending well. Stir in oats and coconut. Drop by teaspoon 2" apart on ungreased cookie sheet. (They spread significantly.) Flatten with a glass dipped in sugar. Sprinkle top with untoasted coconut. Bake 8 to 10 minutes. Yield: 3 dozen.
