Slow Cooker Cheesy Sour Cream Hash Browns

Ingredients
40 oz. Shredded Hash Browns (2.8 lbs)2 cups shredded low fat cheddar cheese1 cup low fat sour cream1 10.75 oz. of cream of mushroom soup
Directions
Use a 4-6 qt. slow cooker
Spray slow cooker with non-stick cooking spray.
Combine soup, sour cream and cheese in medium bowl. Mix well.
Pour half of potatoes into slow cooker.
Top with half of the soup mixture.
Repeat layers. Spread soup mixture evenly over top.
Cook on low 3.5-4.5 hours or until the potaotes are tender and cooked through.
Makes 13 3 oz. servings.

    Sounds yummy! WOuld use healthy request soup and add onion, but use major portion control.. This is a big treat! - 4/19/09
