boneless chicken breat (4)1 cup sliced onions1 cup sliced mushrooms1 cup fat free sour cream3 Tbsp. extra virgin olive oil2 Tbsp. unsalted butterHealthy Harvest Pasta Rotini (8 oz)1 oz. white wine3 cloves garlic
Makes 4 1 cup servings
Cook pasta and set aside.
Brown chicken breasts in 1 tbsp. olive oil about 4 minutes per side. Set aside and cover to keep warm. To the pan add the remaining olive oil, onions, mushrooms and butter. Cook until onions and mushrooms are tender but not brown. Add the garlic and white wine. Cook about 5 minutes until most of the wine is absorbed. Add chicken back to pan along with the sour cream. Cook until heated through (approx. 3-4 min) Add the pasta to the chicken mixture and serve.
