mediterranean Chicken Stew

Ingredients
3 chicken breast cut in halfsalt and pepperolive oil1 medium yellow onions choppedgarlic cloves mincedchicken brothitalian tomatoes with juice4 carrots slice 2/1 inch thick14 oz can artichoke hearts (*no marinated) drained1 jar olives drainedcapers drained
Directions
Cut each chicken breast in half for a 3 oz portion. Brown the chicken, add all the ingredients and simmer for an hour. Serve over rice.
