Kidney bean, Corn and Spinach Stew

Ingredients
6 C. cooked red kidney beans, (or 3 cans rinsed and drained)3 C. water2 C. frozen yellow corn1/4 C. apple cider vinegar8 oz. frozen spinach1 medium onion, chopped1/4 C. sugarCayenne pepper, to taste (optional)
Directions
Place all ingredients in a large soup pot. Simmer for 20 minutes or until onion is tender.

For a little extra excitement, make it spicy with cayenne.

Makes 12 one-cup servings.
