Stuffed Portabella Mushrooms with Sausage, Spinach and Cheese

Ingredients
6 large portabella mushrooms8 oz spinach leaves-fresh16 oz Italian Sausage (pre-cooked weight)1/3 cup chopped onion1/2 cup tomatoe sauce4 slices ripe tomatoe1 cup 2% mozzarella cheese1 TBSP olive oilgarlic powderoreganobasil
Directions
Brown italian sausage and onions in skillet-drain
Coursely chop spinach and add leaves and tomatoe sauce to skillet. Add spices and simmer for 5 minutes. It will look like way too much at first but the spinach will cook down.

Scoop gills from underside of mushrooms and remove stems. Brush with olive oil (if grilling). Place on preheated grill bottom side down for about 4 minutes. Remove from grill and add stuffing mixture and top with tomatoe slice and cheese. Return to grill for 5 minutes until mushrooms are cooked through and filling is hot.

I'm not sure how long you would bake this but I would think maybe 15 minutes at 350.

    I used turkey sausage, which cut a little on calories, but overall it was very delicious. I will definitely make it again, though it was a little too juicy. Which can be remedied by cooking the spinach separately and draining it before adding it to the meat. - 5/14/09
