Directions

Preheat oven to 350 degrees. Line 2 cupcakes pans with foil cupcake papers (24) and place one cookie in the bottom of each. In a mixer bowl, cream the neufchatel cheese, tofu and honey until smooth. Add the remaining ingredients and beat until smooth. Pour over the cookies in the cupcake papers (about 2/3 full). Bake about 20 min, until the filling is set. Cool and refrigerate. Can be served with sweetened sour cream and fruit.
