Natural Wheat Bran Muffins

Ingredients
1/4 cup oil1/2 cup firmly packed brown sugar1/4 cup molasses2 eggs, beaten1 cup milk1 cup all purpose flour1.5 tsp baking powder1/2 tsp baking soda3/4 tsp salt1 tsp cinnamon11/2 cups natural wheat bran1/2 cup raisins if desired
Directions
cream oil and sugar together, add molasses and eggs and beat well. Add milk then bran. Mix baking soda, baking powder, salt and cinnamon together with the flour then add to the liquid ingredients, mix until combined. bake at 400 degrees for 18 to 20 minutes.
makes 12 muffins.

    These muffins taste good, maybe a tiny bit dry, but good and are fairly big. I would have given these 4 stars, however I did the calorie calculations myself after making these, and they actually come out to 259 calories a muffin - ok for a quick breakfast, but too high calorie for a snack imo. - 4/4/12
