mushrooms( I put a whole container)onion 1/2 a small or to tasteyellow squashzucchinilite soy sauce to tasteyellow or orange bell pepper sliced or dicedgarlic to taste (I use a tsp of roasted garlic)2 pita pockets
In a skillet sprayed with nonstick, no calorie cooking spray, saute' onion, garlic and mushrooms. when mushrooms release their moisture add peppers, zucchini, and squash. When all veggies are tender add soy and stir. Let simmer until veggies are to desired tenderness. Scoop into halvened, warmed pita pockets, serve.
