Allie's Chicken Lasagna

Ingredients

1 package (~500g) ground chickenProcutio, finely chopped (optional)1 Zuccini & 4 Mushrooms, thinly sliced 1 jar of PC Blue Menu Tomato/basil sauceKamut Lasagna noodles, pre-cooked per the directions on the box½ package of spinach leavesRicotta cheese 1 ball Mozzarella, shredded and dividedhandful of fresh basil, finely chopped1 garlic, minced1 eggRomano or Parmasean
Scramble fry the chicken with a little oil (if necessary to prevent burning). Remove to a bowl
Saute the vegetables together in the drippings
Mix the meats together with the tomato sauce
In a separate bowl, mix the Ricotta, garlic, egg, mozzarella (half) and basil
Layer (noodles, meat, veggies with spinach) and repeat as necessary
Top with remaining cheeses
Bake at 350F for 30 min or until the cheese melts. Serves 9 or 12 depending on how you cut it.
