grilled yam, onion and bell peper salad

>2 tbsp. fresh thyme, chopped>2 tbsp. apple cider vinegar>1 tsp. paprika>1/8 cup extra virgin olive oil>1 red-skinned yam, peeled, cut into 1/2-inch-thick rounds>1 red onion, peeled, cut into 1/2-inch-thick rounds>2 sweet red peppers (bell peppers)
Preheat grill or broiler. In a small bowl, whisk together thyme, vinegar, paprika and olive oil. Lightly brush mixture on both sides of yam and onion slices (don't throw out the rest of the mixture). Place yams, onions and whole bell peppers on grill. Cook 10-15 min. per side; turn frequently to avoid burning. Yams may take a bit longer then the onions and peppers. Allow the skins of the bell peppers to become a little charred. Once veges are cooked, remove them from the grill to cool. Using a knife scrape or rub off the charred skin from the bell peppers. Cut yams, onions and bell peppers into half-inch chunks and toss together in a large bowl. Drizzle with remaining olive oil mixture. then all you have to do is server immediately or refrigerate in an air tight container. I hope you enjoy!
