Cream Cheese Crockpot Chicken Fajitas

Ingredients
2 full boneless/skinless Chicken Breasts2 green bell peppers (bell peppers); sliced1 red bell pepper; sliced1 onions; sliced1 box Fat-Free Cream Cheese; cubed6 Carb Balance Fajita size flour tortillas; warmed
Directions
Place chicken in bottom of crockpot; top with bell peppers and onions. Cover and cook through.

Once chicken is cooked through, shred it with a couple forks, return to crock and add cubed cream cheese.

When cream cheese has melted, serve in warmed Carb Balance Fajita size flour tortillas

    I don't recall adding any liquid but I might just try adding a bit of broth next time. The cream cheese melts down to a rich/creamy sauce but it IS still "thick" so if you plan to serve it with pasta instead of tortillas, you might want to go ahead and add some fat-free chicken broth or something.
