Apple & Raisin Muffins

Ingredients
Wet Mix:1 cup Raisins or sultanas2 med Apples finely gratedThe zest of one orange or lemon1 cup waterDry Mix:1 1/4 cup Self Raising flour1/2 tsp nutmeg1/2 tsp cinnamon
Directions
Pre heat oven to 180 C & oil muffin pans. I recomend not using muffin papers as these will stick to the paper.
Combine all wet ingredients in a large bowl and mix well.
Add the dry ingredients and quickly mix through with a spoon.
Fill each muffin pan with 1 1/2 tbsp of the mixture and bake for 25min or until slightly golden.
Makes 12 x 60g muffins
