chicken fried rice

Ingredients
chicken breast (boneless skinless), extra virgin olive oil, white rice, green pepper, garlic, onion, large eggs, peas, soy sauce
Directions
cook rice to desired tenderness.
chop chicken breast into small cubes.
mince 2 garlic cloves.
chop onion into 1 cup
chop green pepper into appx 1 cup
beat two eggs, and scramble until they are very dry.
add two tbsp EVOO to wok or lg saute pan, when heated add garlic, onion and green pepper. saute for 2-3 minutes. add scrambled egg. add chicken breast and stir/saute everything for 5-6 min (until chicken is nearly done). add cooked rice and 1 tbsp soy sauce. stir constantly for 2-3 minutes. add defrosted peas. simmer and stir for an additional 5-6 minutes, until all chicken is thoroughly cooked and rice is brown (from heating and soy sauce).
