Roasted Vegtables with Tofu

Ingredients
Zucchinni - mediumYellow Squash - 1 smallRed Potates - 3 smallCarots - 1 largeRed PepperBalsamic VinegarRosemary or ThymeOlive Oil or your choice1 half block tofu
Directions
Chop vegtables into bite size pieces, place in roasting pan and season with herbs of yourchoice, I love Rosemary, add balsamic vinegar and oil. Roast at 350 degrees for 30 minutes, then add crumbled tofu and roast till vegatbles are cooked to your tase. I did al dente style. Serve with a green salad and crispbreads (not included in calorie count).
