Simple Yellow Split Pea Soup

Ingredients
4 cups dried yellow split peas1 medium onion, chopped2 tbs chopped garlic2 tbs parsley, dried4 cups fat free chicken broth8 cups watersalt & pepper to taste
Directions
Combine all ingredients in a pot.
Bring to a boil then reduce heat to a simmer and cover.
Simmer for 2 hours or longer - until peas are tender. Being sure to check the liquid level often while cooking so that the peas do not burn or dry out - Add water or chicken broth as needed.
Using an immersion blender puree until the consistency desired.
If too thick then add more water or chicken broth after pureeing to get to the consistency desired.

    I would not make this recipe again. The peas take more than two hours of simmering to soften, and by the time they do all of the flavor from the chicken broth is gone. - 5/12/09
