Rachael Ray's Meatloaf Muffins

1 lb. lean ground beef1 onion1 green bell pepper2 carrots2 stalks celery1 egg3/4 - 1 cup plain bread crumbs (nutrition is for 3/4 cup)1/2 cup salsa1 cup BBQ sauceKetchup to taste1 T Worchestershire sauce1-2 T grill seasoning (such as McCormick)
Pre-heat oven to 450 degrees.
1. In a food processor, process onion, pepper, carrots, and celery until finely chopped. Put vegetables in large bowl with meat.
2. Whisk one egg, and add to bowl with meat along with breadcrumbs and grill seasoning (I use about 1.5 T, but feel free to add more if you like a lot of seasoning).
3. In small bowl, combine salsa, ketchup, BBQ sauce, and Worchestershire sauce. Stir. Add half of this into the bowl with the meat and mix with hands. Save the remaining sauce.
4. Spray muffin pan with non-stick cooking spray. Spoon meat mixture into each cup until level with top of pan. Spoon remaining sauce on top of each muffin. This should make approximately 18 muffins.
5. Bake on 450 degrees on middle rack for 20 minutes.

Good taste,but too moist. Couldn't get them out of the muffin pan without them falling apart. Did anyone else have an issue with lots of grease spilling from the muffin cups? I had quite the mess, and fire detectors were going nuts while they cooked. Used 90% lean ground beef, suggestions welcome!! - 9/2/13
