Island Pork (Vivian's)

Ingredients
Rub:2 tsp. salt1/2 tsp. pepper (seasoned pepper)1 tsp. cumin1 tsp. chili powder1 tsp. cinnamonGlaze:1 cup brown sugar(packed)2 Tbs. minced garlic1 Tbs. Tabasco suace.2 pork Tenderloins (together weighing 2 1/2 LBS.)Preheat oven to 350 degrees.Mix rub and rub on all sides of tenderloins. Heat 2 TBS olive oil till it is smoking and brown tenderloins for a total of 4 minutes.Spoon glaze on hot browned loins and roast in oven until temp reads 140 degrees or cook 20-30 minutes. Don't cook too long as it will dry out.Slice in 1/2" medallions, and cover with sauce.
Directions
