Rice Flour Waffles

Ingredients
Directions
1 1/4 cups brown rice flour1/2 cup corn starch1/4 cup tapioca starch2 tsp baking powder1 tsp salt1 tbsp granulated sugar1/4 tsp nutmeg2 tbsp canola oil1 egg, beaten1 cup light soy milk or rice milk1 tbsp lemon juice
Mix dry ingredients: Rice flour, tapioca starch, corn starch, baking powder, salt, sugar and spice.
Mix liquid ingredients: milk, lemon, oil and egg.
Blend together.
Preheat waffle iron and lightly grease. Pour batter on iron and close. Bake until steam stops coming from the iron. These didn't rise as much as regular waffles so I flipped the whole thing in the iron and closed it again to crisp the top.
Repeat until all batter is baked. These are crispy and light. They can be eaten for breakfast or used like bread in sandwiches. Yummy toasted the next day.
For a sweeter waffle, cinnamon can be used instead of nutmeg.

I find they rise very well. 2 tips that might help with the rising: measure out your cup of milk and add the lemon juice directly to it. I use almond milk and it curdles just like dairy does. let it stand for 5-10 minutes. Don't stir it! Don't combine wet and dry until your waffle iron is hot. - 8/17/14
