Crispy Juicy Oven Chicken

Ingredients
4 whole boneless skinless chicken breasts1/2 cup sour cream3 cups crushed cornflakes4 TBS grated parmesan cheese3 TBS olive oil
Directions
Put a rack on a shallow baking sheet and coat with cooking spray. Preheat oven to 375 degrees. Combine crushed cornflakes, Parmesan cheese, and olive oil. Add fresh grated black pepper to taste and combine. Coat chicken breasts with sour cream and roll in cornflake crumb mixture pressing to cover all sides of chicken breasts. Put on rack on baking sheet and bake in oven about 20 min or until cooked through.

    This was very good!!! Although I did make a few changes. I added fat free sour creame mixed with a hint of garlic powder, dried sage, dried rosemary to the chicken. Then I added the crushed cornflakes. Note: make sure you mix the spices in with the sour cream then spread it on the chicken. - 4/27/09

    Yum. Crunchy. The rack makes all difference. I used reduced fat sour cream to save a few extra calories, brushed it on. Might try it with reduced fat mayo sometime, too. Nice and moist. Thank you. - 4/25/09
