1 pound Foster Farms Ground Turkey (lean)0.25 tsp Garlic powder0.25 tsp Onion powder0.25 tsp Black Pepper0.25 tsp Fennel seed0.25 tsp Coriander seed7 oz (1/2 box) Heartland Whole Wheat Rontini Pasta2 cans S&W Stewed Italian Recipe Pear Tomatoes1 can Green Giant Whole Kernel Sweet Corn1.5 cup sliced Zucchini1 oz (about 2 Tbsp) Athenos Reduced Fat Feta Cheese0.25 cup Parmesan Cheese, grated1.75 cups Colby and Montery Jack cheese, shredded
Brown the turkey & seasonings in a large non-stick skillet over med/med-high heat. Cook pasta according to package instructions (better if cooked longer, not al dente). Meanwhile, slice the zucchini and open the cans of tomatoes & corn. Drain & rinse the corn to remove some of the salt. When turkey is fully cooked (no pink anywhere), add the tomatoes, corn, zucchini and drained pasta. Heat until the tomato juices simmer, add all the cheeses and stir well.
Makes 10 servings, 1 cup each. This is very filling and quite tasty!
