Marion's famous rice pilaf

Ingredients
1/2 onion, chopped1/4 cup margarine1 can beef consomme1 can mushrooms (do not drain)1 cup long grain rice1/2 can water (or less)1 tsp oregano
Directions
Place chopped onion and margarine in casserole dish and microwave briefly to melt margarine and slightly cook onions. Throw in other ingredients. Stir a little. Place, uncovered, into oven @ 350F for about 40 minutes or more. Rice is done when liquid is almost completely absorbed, but still very moist.

Will feed 4 - 6 people well!
