Ingredients
1 Sm-Med size Zuccini1 Sm-Med size Yellow Squash1 Sm can Ro-tel diced tomatoes 1 Pkg. Shredded Casserole Cheese
Directions
Wash Zuccini and Squash. Slice with skin on into 1/2 in thick circles. Place in skillett and saute with small amout of butter(if desired). Saute until slightly soft. Add Ro-tel and let simmer about 15 min. Melt casserole cheese on top and season with salt and pepper to taste. Makes about 3-4 one cup servings depending on size of the Zuccini and Squash.
