High Fibre Banana Chocolate Chip Muffins

Ingredients
1 cup Buckwheat flour1 cup mashed bananas, approx. 2 med.3 Tbsp. baking powder1/2 tsp. baking soda1 tsp. white vinegar1 egg1/4 cup packed brown sugar4 Tbsp. Chocolate Chips
Directions
In a bowl, mash banana, spinkle with the baking soda and then the vinegar and stir. Add the egg and stir again. Set aside.
In a larger bowl, mix flour, baking powder, sugar and chocolate chips, stir.
Pour the banana mixture on to the dry ingredients and stir until just blended.
Evenly distribute the batter into 12 greased muffin cups.
Bake at 350 F. for 15 minutes.
Allow to cool before removing from tin. Enjoy!
