Ingredients
Preheat oven to 400FDry:1cup stone ground whole-wheat pastry flour1cup unprocessed wheat bran1/4 cup milled flaxseed1/4 cup soy flour2 tsp. baking powder1/2 tsp. baking soda1/4 cup sugar3/4 tsp. cinnamon1/2 tsp. salt1/4 cup chopped walnuts1/4 cup raisinsWET:1 small granny smith apple, grated with skin1/4 cup canola oil1/2 cup egg substitute1/4 cup non-fat milk1/4 cup unsweetened applesauce
Directions
Mix wet ingredients with dry, stir just until mixed.
Pour into a greased muffin tin.
Bake 18-20 minutes @ 400 F

Makes 12 muffins.
