black bean steak chili

Ingredients
2.3 lbs tender chuck steak2- large cans black beans, 28 oz.2 large cans diced tomatoes, 28 oz.1-2 large onions, diced6 cloves garlic1 large yellow bell pepper, roasted and diced4 Tbsp chili powder, or to taste2 Tbsp. unsweetened cocoa2 Tbsp. cumin powder2-4 Tbsp. oregano3 Tbps. olive oil1/2 cup low fat chicken broth salt to taste
Directions
saute onions in batches in oil to soften and carmelize some. Add chopped garlic to last batch and before removing from heat add 3/4 of the spices to center of skillet, heating until aroma rises. Add chicken broth to loosen brown bits and spices and transfer to a slow cooker or dutch oven.
Add remaining ingredients except meat and remaining spices to slow cooker.
rub meat with spices and brown on all sides. Remove from heat and allow to cool. Cut meat into bite size pieces. It will still be rare.
Add meat to slow cooker and set on low heat for 6 hours. Check salt part way thru cooking.
If using a dutch oven cook on top of the stove over low heat stiring occasionaly.
