Ingredients
one 16 oz can black beansone 16 oz can pinto beansnote: you can also use ranch style beans1 Tbsp olive oil1lb ground turkey1 diced onion2-3 minced garlic cloves32oz stewed tomatoes1 bottle beer (good enough to drink)note: best with beer but you can do it just with waterchili powder to tasteground cumin to taste1 tsp dried oreganooptional:a couple of chopped carrots1/2 cup diced bell pepperor anything else you want to add. this recipe pretty much changes every time I make it.
Directions
saute all vegetables in oil for a few minutes. add turkey and brown; drain. add drained and rinsed beans, stewed tomatoes, beer and spices. bring to a boil then turn it down to a simmer. I like it best when it's simmered for at least 45 minutes, but you can do it more or less as you please. add a little water if it gets too thick while simmering. note: break up the tomotoes a bit as they cook with the back of your spoon unless you like really chunky tomatoes in your chili. add salt and pepper to taste and enjoy!.
serving options... a dollup of low-fat sour cream, a sprinkling of raw chopped onions and/or sharp cheddar cheese, and saltines or cornbread on the side.
