Mock Turkey Philly

1 Tbsp Extra Virgin Olive Oil8 oz turkey breast lunch meat (I use Hillshire Farms Deli Select Mesquite Smoked Turkey)1 large green pepper, sliced1 large onion, sliced2 cups sliced mushrooms4 Laughing Cow Light Creamy Swiss Original Cheese (or your favorite flavor)
Slice onion into rings. Slice green peppers into strips. Slice mushrooms or buy the pre-sliced mushrooms. Roll up turkey and slice into strips.
Heat large skillet on medium heat. Add olive oil. Add onion, green pepper and mushrooms to the skillet once olive oil is heated. When onions are translucent, add the turkey and cheese wedges. Cook until turkey is heated through and cheese has melted...stirring until everything is coated in the melted cheese.
Divide into four equal servings.
