Mini Cheesecake w/graham cracker crust

1C graham cracker crumbs (about 6 sheets)2Tbsp Brown Sugar2Tbsp Butter15oz Fat Free Cream Cheese1/2C Sugar1/2tsp vanilla1/4C egg substitute12 Foil Cupcake liners
Preheat oven to 350 degrees. Line cupcake tin with foil liners.
To make crust, mix cracker crumbs, sugar, and butter. Press into bottom of cupcake liners.
To make filling: in mixing bowl, beat cream cheese until smooth. Add sugar and vanilla and mix well. Add egg beaters and beat until smooth.
Pour cheesecake mixture into cupcake liners. Bake until center is almost set. Cool then refrigerate 2 hours or overnight.
