Ingredients
1 LB - Foster Farms Chicken Breasts - Boneless, Skinless2 Cups - Albertsons Whole Wheat Rotini Pasta9 OZ - CostCo - Eat Smart - Broccoli Florets1/2 Cup - Onions, raw, chopped1 TBSP - Country Crock, Shedd's Spread Country Crock Plus Calcium & Vitamins2 Cups - Albertsons Fat Free Mozzarella Shredded Cheese4 OZ - Albertsons 1/3 Less Fat Neufchatel Cream Cheese1 Cup - Imagine Organic Free Range Chicken Broth - Low Fat - Low Sodium
Directions
Prep - Cut raw chicken into bite-size chunks. Cut broccoli into bite-size florets.

Heat oven to 375*F. Cook pasta in large saucepan as directed on package, adding broccoli the last 3 minutes.

Meanwhile, heat large nonstick skillet on medium-high heat. Add chicken; cook 3 minutes or until no longer pink, stirring frequently. Stir in broth; simmer 3 minutes or until chicken is done. Add cream cheese; cook and stir on low heat 1 minute or until cream cheese is melted. Stir in 1 cup mozzarella.

Drain pasta and broccoli. Add to chicken mixture, mix lightly. Spoon into a 2 1/2 quart baking dish.

Bake 15 minutes or until heated through. Sprinkle with remaining cup of mozzarella cheese. Bake 3 minutes more or until cheese is melted. Remove from oven and let stand 5 minutes. Serve.

    I would guess that it's 2 cups UNCOOKED pasta. Also, I'd put the onions (and country crock) in with the Chicken and grill the onions before adding any cheeses. And to echo previous comments, garlic is a NECESSITY in this recipe. - 5/11/09

    It sounded WAY too good to be true ... and it was. This recipe, using Spark's calculator, is 592 calories per serving -- Yikes!!! That's a whole lot more than 338.

    One day, I will read the comments before I begin making a recipe! It was only after I had cooked the chicken and added the broth that I realized I hadn't used the onions or butter. Added onions to the chicken/broth mix & didn't use the butter. Added salt, pepper, garlic powder. - 12/2/09

    The naming of the brands of food was a bit unnecessary - I am assuming that the chicken is sauted in the margarine, although I skipped it completely using Pam instead. There was no mention of adding the onions, so I threw them in with the chicken. Garlic would be good addition. - 6/29/09
