Moist & Tender Low- Carb Turkey Meatloaf

Ingredients: 20 oz. Ground Turkey, 97% lean1/4 cup Oatmeal1/2 cup Beans, great northern, mashed 1/2 cup Wheat Bran1/4 cup Egg Beaters 2 Tbs Sweet Red Peppers, minced 2 Tbs. Sweet Yellow Onions, minced2 Tbs. Parmesan Cheese, grated 1 Tbs. Fresh Parsley, chopped 1 tsp. Salt 1 tsp. Pepper1 Tbs. Ketchup, Heinz 1 tsp. Lea & Perrins, Worcestershire Sauce
Soak oatmeal in a 1/2 cup of water for 5 mins. drain and set aside.
Put ground turkey into a large bowl. Mash beans with a fork an add to bowl. Add ketchup, Egg Beaters, worcestershire sauce, parsley, salt & pepper and mix well.
Saute onions & peppers in water, in non stick pan until soft, slightly cool and add to meat mixture.
Add wheat bran,, parmesan cheese and oatmeal mix well.
Shape meat mixture into a rectangular loaf.
Take the rack from your roasting pan and cover it with aluminum foil, then pierce it in several places with a fork and spray with Pam. Place meatloaf on the rack, then place in roasting pan. Fill the roasting pan with water to just below the rack.. Tightly cover the whole pan with foil and place in a 375F oven for 45 mins.
Remove foil and return to oven for another 15 minutes.
