DM's chicken skewers

Ingredients
2 lbs raw skinless/boneless chicken tenders, cut into bite size pieces3 raw zucchini1/2 red onionHoney Teriyaki marinade*(store bought at least 8 oz)(for mini size use 4" skewers)*Marinade itself has 25 cals per tbsp if extra is used for dipping
Directions
1. Put raw chicken in a glass or plastic container large enough so they're not too crowded.
2. Pour enough marinade to cover the chicken (I used a cup) and marinade for at least 4 hours, covered in the refrigerator.
2. Preheat oven to 375F
3. Slice zucchini and onion to bite size pieces.
4. Thread 2-3 veggies per 1 piece of chicken onto each mini skewer. Leave space between the pieces so they cook evenly.
5. Arrange skewers on a large baking sheet so they're not too crowded and bake for 15-20 mins.
6. Discard leftover used marinade (measure before discarding to get an idea of how much was actually absorbed.)
7. Set out fresh marinade for dipping if desired.

    I made this last night ~I added mini Portabello mushrooms and cherry tomatoes. I used a balsamic vinegarett/honey marinade for 30 minutes on the chicken. I haven't used chicken tenders in a recipe before, but this turned out marvelous!
