Guilt Free Hash Brown

Ingredients
4 cups hash browns, shredded1 cup mushrooms, sliced1/2 cup each of the following:carrots, choppedonions, choppedgreen pepper, choppedpepper, to tastesalt, to tasteOptional: shredded cheese (not figured in calorie count)
Directions
Pre-heat oven to 400 degrees. Chop mushrooms, carrots, onions, and green peppers. Spray cookie sheet with non-stick spray. Spread chopped vegetables on pan. Sprinkle with salt and pepper. Bake for 10 min.

Remove from oven. Add hash browns to vegetables and mix. Add a little more salt and bake for 15 minutes more.

If you like your hash browns crispy, broil for approx. 5 min. after baking. If you choose to add cheese at this time.

This is enough for 4 servings as a side dish or 2 servings for a breakfast served with scrambled eggs on top.

Frozen hash browns vary quite a bit in calories. Look for shredded with no fat added.
