Broccoli Caluflower Cheese Soup

Ingredients
3 Cups 99% fat free Chicken Broth1 16 oz Pkg Frozen chopped Broccoli1 16 oz Pkg Frozen Broccoli & Cauliflower Mix1 10 oz box Velveeta 2% milk Cheese Product
Directions
1. In a large 3 Quart Pot add the Chicken Broth, add the frozen vegetables to broth and simmer for about 8 minutes.
2. With a potato masher mash the vegetables into small bits.
3. Cube the box of cheese and add to the vegetable mixture, melt and serve hot.
Only 1 point per cup this pot makes aprox. 2 quarts of soup.

    Good recipe w/some changes. I used 2 bgs broccoli/cflwer mix, 16oz ea & 2 cans Chicken Broth(4cups), 1/2 c half & half, 8oz cheese, salt/pep/garlic to taste. Came out to only 12 cups and 90 cals/cup. Tasted great!! Thanks :) - 1/2/11
