Artichoke Cheese Rice Casserole

1 6 oz uncle bens original long grain rice2 cups water1 tbls margarine8 oz (2 cups) shredder Monterey jack cheese1 large tomato chopped (reserve 1/4 cup for garnish1 14 oz can artichoke hearts, drained and quarterred1/2 cup mayo 1/2 cup sour cream2 green onions3 tbls chopped parsley
Serves 6
In sauce pan, combine rice water (2 cups) and margarine. Bring to boil over hhigh heat. reduce to low, cover and simmer until all water absorbed.
Spread cooked rice in greased (Pam) 8 inch square dish. Sprinkle with 1/2 cheese, top with tomato and artichokes. In small bowl, combine mayo sour cream green onions and 1tbls of parsley. sread evenly over to an dthen add ramaining cheese.
Bake at 350 for 25 to 35 minutes. Garnish with remaining tomato and parsley.
To double, use a 9X13 casserole dish.
