Cucumber Bell Pepper relish

1/2 tsp Splenda1/8 tsp dried Italian herb blend1/8 tsp Mrs. Dash Pepper blend 3 tsp White Vinegar [or your choice]1 tsp Grainy Mustard1 tsp Canola Oil1/4 cup diced onion1 Cucumber, seeded, diced1 Red Bell Pepper [or color of choice], seeded, dicedOptional: Parsley, chopped fine
In 1 quart bowl, mix Splenda & herbs being used. Stir in vinegar & mustard. add Add oil & stir.
Dice onion & stir into the the dressing.
Wash Cucumber & Bell Pepper. Peel cucumber if it has been waxed. Seed veggies. Dice into small cubes. Stir into the dressing in bowl. May add optional parsley. Cover bowl and refrigerate at least one hour.
Stir again before serving.
