Quinoa with Sundried Tomatoes

1 cup dry quinoa1 tsp olive oil8 sundried tomatoes (not packed in oil)2 tbsp finely chopped onion (or shallots)2 tsp minced garlic2 cups low sodium chicken brothdash cayenne pepper2 tbsp fresh cilantro1 tsp sea saltfreshly ground black pepper
1) Rinse quinoa. Set aside
2) Heat oil in a pan. Add tomatoes, shallots and garlic. Saute for 3-5 minutes. Add broth (or water) and bring to a boil. Stir in quinoa and cayenne. Reduce heat and simmer for 30 minutes, or until liquid is absorbed. Let stand 5 minutes. Fluff with fork, and stir in remaining seasonings.
