Ingredients
1/4 cup plain yogurt1 tsp chopped garlic [from jar]1/2 tsp curry powder1/4 tsp Allspice1/2 tsp chopped ginger [from jar]Dash of ground red pepper6 oz cooked chicken [no bone, no skin, can use thighs & legs] - cut in bite sized pieces.1/4 cup chopped onion1 medium tomato, chopped1 bay leafPAM spray.
Directions
Combine yogurt and seasonings in a bowl. Stir in left over chicken pieces.

Preheat 12 inch skillet to medium. Spray with PAM.
Saute' onions until slightly brown. Add tomato & bay leaf & simmer for 5 minutes. Add chicken and marinade. Bring mixture to a boil. Reduce heat, cover and simmer for 10 minutes, stirring every 5 minutes. REMOVE Bay Leaf before Serving.

If allowed in menu, serve with Couscous.
