Chicken Curry in Roasted Acorn Squash

Ingredients
1 Small Acorn Squash1 Chopped Red Bell Pepper1 Tbsp Olive Oil1/4 cup Golden Raisins1 Med Yellow Onion, Chopped in 1/2" Pieces10 oz Chicken Breast1 Tbsp Yellow Curry Powder1/2 cup Milk
Directions
Preheat oven to 450 degrees. Cut the squash in half, rub w/ half the oil, and sprinle w/ salt and pepper. Roast for 25 min. Heat the remaining oil in large saute pan over medium-high. Add chicken, bell pepper, & onion. Saute for 3 min, then add curry, milk, & raisins. Simmer over low for 10 min. Serve in squash
