Thai Tri Slaw

Ingredients
3 cups shredded cabbage (1/2 bag)2 cups shredded broccoli (bagged 'slaw')1 cup shredded carrots1/2 cup minced fresh cilantro (optional)5 Tbl rice vinegar3 Tbl vegetable oil2 Tbl sugar2 Tbl fish sauce2-3 teas Asian chili sauce1/4 cup chopped unsalted roasted peanuts
Directions
1. Toss vegetables and cilantro together in large bowl.
2. In separate bowl, whisk vinegar, oil, sugar, fish sauce and chili sauce together.
3. Pour dressing over cabbage mixture and toss to coat. Let stand 10 minutes to allow flavors to mingle.
4. Sprinkle with peanuts before serving.
5. optional: add 2 cups shredded cooked chicken during step 1.
