Carrot, Apple & Coconut Muffins

2 cups Whole Wheat Flour3/4 cup Sugar2 teaspoons Baking Powder1 teaspoon Ground Cinnamon1/2 teaspoon Baking Soda1 cup Grated Carrot1 cup Finely Chopped Apple1/2 cup Raisins1/3 cup Chopped Walnuts1/2 cup toasted, flaked coconut2 Large Eggs, lightly beaten3/4 cup Plain Low-Fat Yogurt1/2 cup Milk2 teaspoon Vanilla Extract
Preheat oven to 350. Grease or line a 12-cup muffin pan.
Mix flour, sugar, powder, cinnamon, and soda in a large bowl. Stir in carrots, apples, coconut, walnuts, and raisins.
In separate bowl, mix together the eggs, yogurt, milk and vanilla.
Add wet ingredients all at once with dry and mix briefly until just combined.
Spoon batter in to muffin cups and bake for 18-25 minutes until risen and golden.
Cool for 10 minutes before removing from pan.
