Ingredients
Directions
20 oz Beef Top Sirloin3 T Mrs. Dash Southwest Chipotle Seasoning1 t. garlic powder3 T. Taco Bell Taco Seasoning, Mild1/2 c. diced ripe, red tomato2 T fresh cilantro, chopped3/4 c Kraft Free Shredded Cheddar3/4 c Kraft Free Shredded Mozzarella10 T Roberts Trim 'n Lite Sour Cream10 T Wholly Guacamole Classic5 Mission Carb Balance Fajita Size Tortillas
Place meat between two large pieces of plastic wrap. Pound meat with meat tenderizer with the teeth end until it is about 1/3" thick. Cut into 1/4" strips and place into large bowl.
Add Mrs. Dash seasoning, garlic powder and taco sauce. Mix till evenly coated. Here is where I suggest covering and allowing the meat to sit in the fridge for about 4 hours, then let sit out of fridge for about an hour, so the meat comes to about room temperature.
Pre-heat oven to 400. Layer the tortillas with tin foil so each has a layer of tin foil on top and bottom. Bake these for about 5-7 minutes.
Heat a large skillet to medium high heat. Lightly coat with cooking spray, I suggest an olive-oil based spray. Cook until meat is browned on the outside, yet still pink on the inside, about 5-6 minutes total.
Layer on the heated tortilla's the steak, 1/8 cup of each of the cheeses, 2 T sour cream, 2 T guacamole, couple tablespoons of the tomatoes, and couple teaspoons of the cilantro.
Makes 5 servings. Enjoy!
