Pandora's Favorite Muffins

Ingredients
Dry stuff1 1/4 cup Whole Wheat flour1 1/4 cup Bob's Red Mill hot cereal with flax1/2 cup Brown sugar1 1/2 tsp Baking powder1 tsp Baking soda1 tsp Cinnamon1/4 tsp sea saltWet Stuff1 medium ripe banana mashed1 6 oz. vanilla yogurt1 large egg1 Cup Unsweetened Apple sauce1/2 cup chopped dates1 tlbs. Canola oil
Directions
In a large bowl, using a whisk, mix together all the dry ingredients.
In a medium bowl again using the whisk mash the banana. Then add the rest of the wet stuff and mix with a spoon.( I buy good quality dates and chop them myself.)
Next pour the wet stuff in with the dry stuff and mix with a big spoon.
Spray a little cooking spray into a metal muffin pan. I use a pan that make 6 big muffins. Spoon equal amounts into each muffin hole.

As an option I have added a cup of finely shreded carrot to the mix. Everything else remains the same.

Bake at 400 degrees for about 20 to 26 minutes.
Push on the top of a muffin to see if they are done sometime before 26 minutes..
