Fish & Rice patties = 2 patties per serve

Ingredients

1 cup long grain white rice750 white fish 1/2 cup white onion chopped finely1 Tsp dried parsley or twice that amount freshSalt & Pepper to taste Breadcrumbs to coat
1. First cook the rice, drain & cool
2. Cut fish into small pieces and cook in microwave for 1 - 2 mins (until just cooked through) Drain but save a little of the liquid in a cup.
3. break up fish with a fork and add the rice.
4. add chopped onion, parsley, salt & pepper
Check how it rolls together and add some of the fish liquid if needed . Its better to be a little moist as it stays together better to cook.
Coat in breadcrumbs and arrange on a baking sheet
Spray with a canola or olive oil spray.
Bake in oven under grill - 5 minutes each side
Makes approx 16 reasonable sized patties , with a serve of 2 patties per person.
Great for in home-made fish burgers !

I thought it was very easy to prepare,and very good.
Again,like all recipes that cross my path I had to tweek it a bit. I used brown rice, added a 1/4 cup of Tofu to mash with the fish, a splash of light Soy sauce, & a 1/4 cup of fresh flat leaf parsley. Make it both ways see what works for you. - 4/28/09
