Ingredients
2 tbsp olive oil1 sm onion chopped1 garlic clove, minced2 c parboiled rice3 c chicken stock1 c chopped grape tomatoes3 tsp red sofrito, goya brandoregano to tasteseasoned pepper to taste
Directions
in skillet, saute onion and garlic in olive oil until brown. move into casserole dish and add chopped tomatoes, rice, seasonings, etc. then baked at 350 for 1 hour. makes 8-1 c servings
