Black Bean, Cilantro and Corn Salad

Ingredients
* 1 (15 ounce) can yellow corn, drained * 1 (15 ounce) cans black beans, drained and rinsed * 1 (14.5 ounce) can diced tomatoes, drained * 1/4 cup finely chopped cilantro * 1/2 cup green onions, finely sliced * 1 tablespoon minced garlic * 1/8 cup lime juice * 1 tablespoons olive oil, or to taste
Directions
Stir the corn, black beans, tomatoes, cilantro, green onion and garlic in a large bowl. Gently mix in the lime juice. Drizzle with olive oil to serve. Refrigerate for a couple of hours or over night to blend flavors.
Makes approx. 8 - 1/2 cup servings

Diced red onion
