Golden Carrot Soup

Ingredients
1/3 cup butter ½ cup chopped onion2 cups thinly sliced carrots 3 chicken bullion cubes¼ cup long grain rice 3 cups water½ tsp. salt 2 cups milk
Directions
In a saucepan, sauté onions in butter until golden

Add carrots and toss until coated with butter.

Add bullion cubes, water and rice, cover and simmer until carrots are fork tender and rice is cooked.

Add salt. Add to blender 1/3 at a time, or use a hand blender, blend until smooth.

Return to saucepan, add milk, and heat

Add pepper to taste

Makes 6 servings

    Ouch, low in cals, but the fat content is really high for a soup. Have to say I'd give this one a miss - 2/5/08
